Chicken: Four Ways
March 13, 2026
In this free cooking demonstration, Anca Soloschi, MS, RDN – a Registered Dietitian Nutritionist with Sound Dietitians, LLC – shows you how to turn one affordable, versatile protein into four completely different meals. Co-sponsored by Skagit Regional Health and hosted by Stilly Valley Health Connections, this class is part of our free class recordings on healthy cooking and nutrition.
The four chicken recipes demonstrated in this class:
- Greek Sheet Pan Chicken – herb-marinated chicken thighs with zucchini, bell pepper, and onion, finished with crumbled feta and olives; a simple one-pan dinner that practically makes itself
- Chicken Pot Stickers – homemade dumplings with a ground chicken, napa cabbage, ginger, and sesame filling, pan-seared to a golden crisp and freezer-friendly for easy meal prep
- Curried Chicken Salad – a lighter twist on the classic using a mayo-and-Greek-yogurt blend, curry powder, almonds, and dried apricots – plus a nutrition tip on why black pepper belongs in every turmeric recipe
- Quick Chicken Tortilla Soup – a pantry-friendly, dump-and-go soup using canned chicken, diced tomatoes, corn, black beans, and taco seasoning, topped with avocado, cheese, and cilantro
Throughout the class, Anca shares easy ingredient substitutions, budget-conscious tips, and practical kitchen techniques suitable for all skill levels.
